WIAW: Wholesome Goodness

Another WIAW and a new theme from the fabulous Jenn - WIAW Goes Green! Taking inspiration from St Patrick’s Day, this month is all about love for green things. My usual diet does involve a lot of green so I’m looking forward to taking part in this!

Here are my eats from Saturday, when I had an awesome day with James. In keeping with the theme – spoiler alert! – here are the green things I enjoyed during the day.

Green Count = 4 (apple, avocado, cucumber, spinach). Hopefully I’ll be able to beat that next week!

Breakfast: A Trek Peanut and Oat bar

We were headed to Parkrun and I knew I would need something in my stomach straight after the run, so I chucked a few energy bars in my rucksack. This is the one I chose – cannot beat the delicious peanut flavour.

After parkrun, we took part in a running workshop and I sipped two herbal teas through it.

When we reached home I was so hungry and craving my usual breakfast of apples, nut butter and cacao nibs. I went with it and paired it with some warming soup and tea.

Lunch: Vegetable soup, apple, peanut butter and cacao nibs, Pukka tea

After lunch I showered up and went for a walk around the city, which was lovely. Especially with a free coffee in my hand!

Snack: Black coffee

I always seem to do WIAW posts on days where I have the same dinner and apologies but I did it again this week!

Dinner: Cod, avocado, spinach, cucumber, tomato, olive oil and balsamic, sweet potato, feta cheese

Classic and delicious! I put the feta between two wedges of sweet potato so it melted – so tasty!

A little later it was time for a yummy dessert.

Dessert: Half a Total 0% blueberry split pot with lots and lots of chopped strawberries

We ended up watching The Best Exotic Marigold Hotel and munched on fruitcake slices. I love that they contain mainly dried fruit and are organic.

A great day of eats and I felt brilliant at the end - satisfied but not stuffed. Hope you’re having a great week!

    I think ‘satisfied but not stuffed’ needs to become my new eating mantra- for some reason, not running means my appetite rockets! Your lunch looked yummy, and well deserved after such a brill parkrun time!

    • My appetite has been crazy recently Sarah – like I can eat and eat and not feel full at all – so I’m trying to use it too haha! That and getting back into running. Thanks, still obsessed with apples and nut butter :)

        I think it could be a useful mantra! I can see why you’re obsessed- I’ve only tried peanut butter and I’m obsessed, I get the feeling once I venture into almond butter there’ll be no going back… :D

      • Haha it really is! It’s easier to add more and more almond butter because it can be drier than PB and therefore doesn’t go as far when it comes to dipping action :)

  3. I have never heard of Trek bars, but they sound delicious. Where do you normally buy them?

    Yes, it may be the same dinner, but why quit on a good thing, right?! ;)

    I’ve never heard of Trek bars either, but the second you said peanut butter, I was sold. Do you buy them at your regular grocery store?

  9. I love trek bars, can’t get them in Ireland though as they contain gingko biloba which is banned here :(
