Happy Wednesday! Did you have lots of fun flipping pancakes last night? Anyone try out the recipe I posted? It felt weird not to eat pancakes on Shrove Tuesday but of course I had my fill on Monday night instead.
Every year pancake day reminds me how much I love them and how easy they are to make – I need to make them more than an annual occurence for sure!

What I love about WIAW (apart from looking at all the other amazing-looking eats) is how much I learn from looking at what I eat.
This week is no exception. These are my eats from Saturday,when I was supposed to be working in the office all day.. Obviously I can prepared with:
All of my eats to help me power through – vegetable soup, frozen cherries, cashew butter, cacao nibs, a beond bar, yoghurt and apple.
But I was called out of the office super early in the day, meaning I had to improvise a little..
Breakfast: A Bounce Vitality Lift Pecan and Cashew ball and a black coffee
To be fair, this did keep me going for a little while as I walked around Bristol city centre on a job. Then I became really quite hungry and had to grab a pick me up while I filed copy.
Snack: Cafe Nero biscotti and herbal tea. Note: Coffee is much better for dunking biscotti in.
After I finished filing it was time to head home and I was so excited about the prospect of real food.
Lunch: A huge organic apple with cashew butter and cacao nibs with a Yogi Tea Women’s Energy on the side.
Couldn’t go a day without my beloved apple, nut butter and cacao nibs
And yes I did cheer myself up by using the Toy Story mug and bowl. Even though the mug is toddler sized. Super strong berry tea!
James and I did a few chores and relaxed at home for the rest of the afternoon before I started preparing dinner.
Dinner: Spinach, cucumber, tomato, avocado with olive oil and balsamic with cod and sweet chilli sauce
Recently I’ve been eating my dinner from a bowl. It sounds odd but it really enhances the flavour – you get the sweet chilli sauces mixing with the spinach and the olive oil and balsamic adding a little zing to the salmon. So tasty.
Dessert: Defrosted frozen cherries with pecan caramel swirl ice cream
This tasted absolutely amazing but I was still hungry so a little later I went back into the kitchen and made myself a little plate of treats.
Snack: Iced rich fruit slices, pistachio halva and Pulsin’ Bliss Bar chunks
Lesson learned – not filling up on fruit and veggies leads to my menu being filled up with too many packet foods! Oh and I think I may have failed with Jenn’s ‘Love you veggies’ party.. just about got my five a day in there I think.

That is one gigantic apple!! Ha Ha. I can’t EVER go a day without at least one apple. I actually almost always have two.

I completely agree about WIAW – so interesting to look at what I eat from day to day – especially when I look back at how I used to eat (all I can say is yikes! – no where near enough!) so its a really positive thing for me
I didn’t do WIAW when I wasn’t eating enough but I can use it to see patterns in my eating that might need breaking (cough nightly rich fruit cake habit!) and embracing (bulking up salad etc). It is nothing but positive for me too
I love see what everyone else has to eat!

I’m a total fitness junkie and preparing your meals is so important! I cook batch meals on Sundays so I have stuff to bring to work for the rest of the week.

We still have Kellogg’s cartoon bowls from when I was very little that I use now and then…nothing like a little nostalgia!
I love those bowls! We never used to buy the cereal but my friends did and I was always v jealous!
Cocoa nibs just sound so perfect. They sound way healthier than chocolate chips… Maybe that’s the appeal? Haha. I don’t know, but cocoa nibs and cashew butter sound like an amazing snack!
It is so, so good. They don’t taste like chocolate chips, they’re not overly sweet but are really yum!
I need to try this nut butter cacao nibs combo!

So many good bars in this post! Your packed lunch looks great- I love having healthy options with me, and always pack pretty much the whole fridge on roadtrips;)
Roadtrips are my biggest excuse to pack the car full of food! Cupboards are emptied, petrol stations are ransacked. It’s a serious business!
I must have my daily apple with peanut butter and dark chocolate too! Very rarely does a day go by without it! And I enjoy my meals in a bowl too. For some reason, everything is better in a bowl. And sometimes my oatmeal or yogurt parfaits are eaten out of a mug.
