Happy Wednesday! Can you believe how fast this week is flying by? It is great to take part in another WIAW, hosted by the wonderful Jenn, who does such a fabulous job.
I love checking out all of the other WIAW posts too, so much amazing food – and great ideas for next time.
I mainly eat the same foods (how boring) so I try to take pictures on a day when I know that something out of the ordinary will be featuring on my menu.
These are my eats from Sunday, when we were invited round to my friend’s house for Sunday Roast. There was a big group of us and we had a lot of fun – plus my friend is a brilliant cook so the food was great!
My day started off with a very disappointing event – noticing that the peanut butter was empty and there was no other nut butter in the house. Nightmare!
Breakfast: An organic apple with peanut butter and a Pulsin’ Energy bomb.
I then walked down to town to pick up urgent supplies of almond butter, vitamins and herbal tea. I ended up powering round as I left my wallet in a shop and had to walk back. After grabbing it, I walked back up towards our home and met James. We picked up some flowers, drink and chocolates for the roast.
Lunch: Roast pork, steamed leeks and broccoli, roast parsnips and sweet potato with vegetarian trifle for dessert.
Oh my goodness it tasted incredible! I took a picture before I coated everything with gravy – otherwise it would have looked like a meaty soup! The trifle was pretty damn good too.
After dinner: Medium Nespresso coffee. Yum!
We played board games together before James and I walked the three miles home. We did even more shopping on the way back, had lots of restocking to do before the next week!
When we reached home I measured out almond and cashew butter into containers with cacao nibs to have with apple for my work breakfasts. Obviously I couldn’t resist spoonfuls of both – and then a couple more with nibs added on top.
Snack: Yogi Tea Women’s Power, spoonfuls of almond and cashew butter, a few more with cacao nibs on top.
It was then time for more chores before I started cooking dinner. I wasn’t planning to have more sweet potato due to the amount I consumed at lunch but James had already cut one and started cooking it before I let him know. Still, I never say no to sweet potato!
Dinner: Spinach, tomato, cucumber and avocado salad with sweet potatoes, feta, cod and sweet chilli sauce. Dessert was three slices of fruit cake, a little plain halva and three huge strawberries.
It was such a good day of eats and there was only two lots of washing up, which was very appreciated!

Haha it was pretty distressing Jessie! I grabbed two jars of almond butter and some cashew butter to ensure it wouldn’t happen again!
That energy bomb bar looks really good. I love quick and healthy snacks like that.
Urgh. And I totally wish that I could partake in this new crazed blog foodie thing (don’t know what to call it. lol) with nut butter and cacao nibs

I’m pretty sure I could eat sweet potatoes at every meal. Love them.

Yes – eating the same is so good for keeping costs down! It was so much fun and delicious. My turn will be coming up, looking forward to the mountains of washing up
. Walking is something I insist on at weekends because I drive so much for work.
